Iβm back with the Lobster & Mango Salsa Salad Recipeπ₯π¦π₯ that’s easy, refreshing, and DELICIOUS!!!
These are the ingredients I used, but please note that you can adjust pretty much any of the ingredients quantities to your taste:
π¦ 4 Lobster Tales
π₯ 3 Avocados
π₯ 2 Mangoes
π½ 1 Cup Corn
π§
1 Shallot
π« 1 Jalapeno Pepper
πΆ 3 Small Sweet Red Peppers
π Zest and Juice of 2 Small Limes
π Β½ Cup Chopped Cilantro
π₯¬ A Few Lettuce Leaves
π§ Salt & Pepper to Taste
π₯ Β½ Teaspoon Chili Powder
πΎ 2 Tablespoons Olive Oil

This is how I made this delicious Lobster Mango Salsa Salad:
π¦ First, I blanched the lobster tails:
I added an onion, a bay leaf, 1 teaspoon black peppercorns to a pot full of water and brought it to a rolling boil. I added the lobster tails and cooked them for exactly 2 minutes, then I transferred them to an ice bath for 10 minutes. Once the lobster tails were cooled, I split them in half lengthwise, took the meat out of the shells, and chopped it to medium sized pieces.
π¦ I prepped and chopped the peppers, shallot, cilantro, mango, and avocado, and transferred them to a bowl. I added the corn, lime zest, lime juice, salt, chili powder, olive oil, and gave everything a good mix.
π¦ I filled the shells with the salsa and served it over a bed of curly lettuce topped with more salsa.
That was one delicious, healthy, and refreshing lunch! Hope you give it a try and enjoy it as much as I did.
