Lobster & Mango Salsa Salad

I’m back with the Lobster & Mango Salsa Salad RecipeπŸ₯­πŸ¦žπŸ₯‘ that’s easy, refreshing, and DELICIOUS!!!

These are the ingredients I used, but please note that you can adjust pretty much any of the ingredients quantities to your taste:

🦞 4 Lobster Tales
πŸ₯‘ 3 Avocados
πŸ₯­ 2 Mangoes
🌽 1 Cup Corn
πŸ§… 1 Shallot
πŸ«‘ 1 Jalapeno Pepper
🌢 3 Small Sweet Red Peppers
πŸ‹ Zest and Juice of 2 Small Limes
πŸ€ Β½ Cup Chopped Cilantro
πŸ₯¬ A Few Lettuce Leaves
πŸ§‚ Salt & Pepper to Taste 
πŸ₯„ Β½ Teaspoon Chili Powder
🍾 2 Tablespoons Olive Oil


This is how I made this delicious Lobster Mango Salsa Salad:
🦞 First, I blanched the lobster tails:
I added an onion, a bay leaf, 1 teaspoon black peppercorns to a pot full of water and brought it to a rolling boil. I added the lobster tails and cooked them for exactly 2 minutes, then I transferred them to an ice bath for 10 minutes. Once the lobster tails were cooled, I split them in half lengthwise, took the meat out of the shells, and chopped it to medium sized pieces.
🦞 I prepped and chopped the peppers, shallot, cilantro, mango, and avocado, and transferred them to a bowl. I added the corn, lime zest, lime juice, salt, chili powder, olive oil, and gave everything a good mix.
🦞 I filled the shells with the salsa and served it over a bed of curly lettuce topped with more salsa.
That was one delicious, healthy, and refreshing lunch! Hope you give it a try and enjoy it as much as I did.
