Snowball Cookies

These classic holiday cookies have so many names – Pecan Balls, Mexican Wedding Cookies, or Snowball Cookies. No matter the name, these little cookies are nutty, buttery and melt in your mouth delicious. Definitely one of the most popular and loved holiday treats! ๐ŸŽ„

Ingredients:
โ„๏ธ 2 cups flour 
โ„๏ธ 1 1/4 cup chopped pecan
โ„๏ธ 2 sticks (1 cup) butter, room temperature 
โ„๏ธ 1/2 cup powdered sugar + more for rolling the cookies
โ„๏ธ 1 1/2 teaspoon vanilla 
โ„๏ธ 1/2 teaspoon salt

Now letโ€™s get to the directions:

๐Ÿฅ Cream butter and sugar together on medium speed until light and fluffy, about 2 minutes. 
๐Ÿฅ Beat in the vanilla, then scrape the sides of the bowl. 
๐Ÿฅ Add salt and chopped toasted pecan, and give it a quick mix.
๐Ÿฅ Add flour in two batches, mixing on low speed aster each addition and scraping the sides of the bowl, until fully incorporated.
๐Ÿฅ Gently knead to bring the dough together, then roll the dough into small balls and place them on a cookie sheet lined with parchment paper.
๐Ÿฅ Bake in a 275F preheated oven for 40 minutes.
๐Ÿฅ When cool enough to handle but still warm, roll cookies in powdered sugar. I like to roll them again in the sugar after theyโ€™ve cooled completely.
