This cheesy chicken and veggies orzo casserole is so perfect for those grey autumn days 🍂 So flavorful and the cheesy topping is just like a big cuddle 🤩
🍲 2 cups Orzo
🍲 1 cup cooked chicken
🍲 1 large onion
🍲 1 cup sliced mushroom
🍲 1 cup grape tomatoes
🍲 1 cup baby broccoli florets
🍲 1 teaspoon fresh rosemary
🍲 1 teaspoon fresh thyme
🍲 3 cups chicken stock
🍲 3 tablespoons olive oil
🍲 Salt & Pepper to taste
🍲 1/2 cup grated Parmesan
🍲 1.5 cup grated Gruyère or mozzarella
Follow these easy steps to put it together:
🍲 In a baking dish, add tomatoes, onion, broccoli, mushroom, and fresh herbs. Season with salt and pepper, toss with olive oil, mix and bake on 400F for 20 minutes.
🍲 Take the pan out of oven, add the cooked chicken, the orzo, and the chicken broth. Mix well cover with foil and bake for 10 minutes. Take it out of the oven, give it a good mix to ensure that the orzo doesn’t stick to the bottom of the pan. Cover and bake for another 10 minutes.
🍲 Take it out of the oven, pop the cherry tomatoes with the back of a spoon, add grated mozzarella or Gruyère cheese, mix, and top with more grated cheese. Bake for 10 minutes, until cheese is melted and edges are bubbly.
