Taco Tortilla Lasagna

It’s time for Taco Tuesday! Mine is lip-smacking delicious and full of flavor! 🤩🌮👌🏻
I made a very tasty tray of Taco Tortilla Lasagna, that came together fairly quickly and was gone in no time. Layer upon layer of spectacular south-of-the-border flavors; and it’s an easy recipe that you can modify to suit yours and your family’s taste preferences and what you have on hand to cook with.👩🏻‍🍳🤌🏻

Here’s the list of ingredients you’ll need to make the Taco Tortilla Lasagna:

🌮 1 pound lean ground beef
🌮 1 tablespoon olive oil
🌮 1 small onion, chopped
🌮 1/2 cup colored peppers, diced
🌮 2 scallions, thinly sliced 
🌮 1/2 cup cooked red beans
🌮 1/2 cup corn
🌮 1 tablespoon tomato paste 
🌮 1 packet taco seasonings
🌮 1/2 cup taco sauce 
🌮 1 cup hot water
🌮 Salt & Pepper to taste
🌮 Grated cheddar cheese
🌮 5 large flour tortillas 

🌮 First gather all the ingredients listed above and start with making the taco meat filling.
🌮 In a deep skillet, heat oil and sauté onion until soft and fragrant. Add the sliced scallions, diced peppers, mix and cook for 2 minutes, then add the ground beef.
🌮 Break the meat lumps up with the edge of a spatula or a spoon. Add cooked beans, tomato paste, taco seasoning; mix and cook for 3 minutes.
🌮 Add the taco sauce and hot water, put the lid on, and simmer on medium-low heat until sauce is thickened; about 10 minutes. Mix the cooked corn in, cook for just a minute, then take off the heat and set aside to cool a little.
🌮 Now let’s assemble the tray. First lay a flour tortilla on the bottom of the pan, spread a thin layer of sour cream on top, then add a layer of the taco meat filling, then a generous sprinkle of shredded cheese. Repeat the layers until the tray is almost full. The top layer should be a tortilla topped with a thin layer of sour cream and a lot of shredded cheese 🤩
🌮 Bake tray in a 350F preheated oven until cheese is melted and lasagna is warmed through. 
🌮 Take out of the oven and add your favorite toppings. I like mine with sliced olives, tomato, avocado, cilantro and jalapeño pepper.
🌮 The leftover taco meat and toppings did not go to waste of course. I used them to make a delicious tray of Nachos, which was a big hit too!
