It’s time for Taco Tuesday! Mine is lip-smacking delicious and full of flavor! ๐คฉ๐ฎ๐๐ป
I made a very tasty tray of Taco Tortilla Lasagna, that came together fairly quickly and was gone in no time. Layer upon layer of spectacular south-of-the-border flavors; and it’s an easy recipe that you can modify to suit yours and your family’s taste preferences and what you have on hand to cook with.๐ฉ๐ปโ๐ณ๐ค๐ป
Hereโs the list of ingredients youโll need to make the Taco Tortilla Lasagna:
๐ฎ 1 pound lean ground beef
๐ฎ 1 tablespoon olive oil
๐ฎ 1 small onion, chopped
๐ฎ 1/2 cup colored peppers, diced
๐ฎ 2 scallions, thinly sliced
๐ฎ 1/2 cup cooked red beans
๐ฎ 1/2 cup corn
๐ฎ 1 tablespoon tomato paste
๐ฎ 1 packet taco seasonings
๐ฎ 1/2 cup taco sauce
๐ฎ 1 cup hot water
๐ฎ Salt & Pepper to taste
๐ฎ Grated cheddar cheese
๐ฎ 5 large flour tortillas

๐ฎ First gather all the ingredients listed above and start with making the taco meat filling.
๐ฎ In a deep skillet, heat oil and sautรฉ onion until soft and fragrant. Add the sliced scallions, diced peppers, mix and cook for 2 minutes, then add the ground beef.
๐ฎ Break the meat lumps up with the edge of a spatula or a spoon. Add cooked beans, tomato paste, taco seasoning; mix and cook for 3 minutes.
๐ฎ Add the taco sauce and hot water, put the lid on, and simmer on medium-low heat until sauce is thickened; about 10 minutes. Mix the cooked corn in, cook for just a minute, then take off the heat and set aside to cool a little.
๐ฎ Now letโs assemble the tray. First lay a flour tortilla on the bottom of the pan, spread a thin layer of sour cream on top, then add a layer of the taco meat filling, then a generous sprinkle of shredded cheese. Repeat the layers until the tray is almost full. The top layer should be a tortilla topped with a thin layer of sour cream and a lot of shredded cheese ๐คฉ
๐ฎ Bake tray in a 350F preheated oven until cheese is melted and lasagna is warmed through.
๐ฎ Take out of the oven and add your favorite toppings. I like mine with sliced olives, tomato, avocado, cilantro and jalapeรฑo pepper.
๐ฎ The leftover taco meat and toppings did not go to waste of course. I used them to make a delicious tray of Nachos, which was a big hit too!
