Kofta Panné a la Ruby 

Happy Ramadan to my family and all my friends who celebrate ☪️💐
Our first Ramadan Recipe is one that many of you have asked me for; Kofta Panné; which translates to breaded beef patties. A perfect make-ahead delicious recipe that is guaranteed to please the crowd 🤩👌🏻

For the Kofta mix, you’ll need:
🧆 3 pounds ground beef
🧆 2 medium onions
🧆 3 tablespoons chopped parsley leaves
🧆 2 mashed potatoes 
🧆 2 large eggs
🧆 3/4 cup bread crumbs
🧆 Salt & Pepper to taste
🧆 1 1/2 teaspoon onion powder @badiaspices
🧆 1 1/2 teaspoon garlic powder @badiaspices
🧆 1 1/2 teaspoon chives @badiaspices

For coating:
🥣 Bread crumbs @badiaspices
🥣 4 eggs
🥣 1/2 cup milk
🥣 Salt and pepper to taste

Follow these steps to make my delicious Kofta Panné:
🧆 First, boil 2 big potatoes until fork tender; mash them, and set them aside to completely cool off.
🧆 Second step, mince onion, lightly salt it, and set it aside for 20 minutes so it releases all it’s water. Then squeeze it very well and set all its liquid aside to use later.
🧆 In the food processor’s bowl, add ground beef, chopped onion, mashed potatoes, parsley, lightly beaten eggs, salt, pepper, onion powder, garlic powder, chives, bread crumbs and pulse everything together until well combined and smooth. Transfer to a wide dish and refrigerate for 1/2 an hour.
🧆 Dip your hands in the onion water as you go and start shaping your Kofta into round or long patties. This will prevent the Kofta from sticking to your hand and will make it easy to shape. Refrigerate kofta for another 1/2 an hour. 
🧆 Beat eggs with salt, pepper and milk. Dip Kofta in egg mixture, then breadcrumbs, and arrange them in a single layer on a tray lined parchment paper. Freeze it for 45 minutes before frying it, or leave it in the freezer until completely frozen, then transfer it to Ziploc bags to enjoy it later.
