Lobster Mac and Cheese

🦞Lobster Mac and Cheese🦞
As it should be 🤩 Creamy, cheesy, rich and very tasty!

You’ll need:
🦞 1 pack (1 pound) elbow pasta
🦞 1 stick (8 tablespoons) butter
🦞 4 cups evaporated milk, or cream
🦞 4 oz (1/2 cup) cream cheese
🦞 2 teaspoons onion powder 
🦞 2 teaspoons garlic powder 
🦞 2 teaspoons smoked paprika 
🦞 Salt & Pepper to taste
🦞 3 tablespoons flour
🦞 1.5 cup freshly grated cheddar🧀
🦞 1.5 freshly grated mozzarella🧀 
🦞 1/2 cup of the pasta boiling water
🦞 Cooked lobster meat and shrimp

🍝 Start by boiling the pasta and set it aside. Save half a cup of the pasta boiling water to add it later to the cheese sauce.
🍝 In a medium pot combine evaporated milk, cream cheese and all the seasonings (salt, pepper, onion powder, garlic powder, and paprika). Let it simmer on low heat while you prepare the roux.
🍝 in a large pot, melt butter, add the flour and cook it while stirring, until light golden in color and fragrant. Add the hot seasoned milk and cream cheese mixture, and whisk until well combined. Add the pasta water and continue whisking, until smooth. Now add 2/3 of your grated cheeses, saving a third to sprinkle on top. Continue mixing until the cheese has melted, then add the cooked pasta, lobster meat and shrimp. Give it a good mix and transfer it to your baking dish. 
🍝 Sprinkle the remaining grated cheese on top and bake uncovered on 350F until the cheese has melted, about 15 minutes. I like to broil it for a couple of minutes, just until the top gets a nice golden color. Sprinkle some chopped fresh chives on top; and VOILA‼️
