This treat is just what you’ll need to get you through the week! Sweet Potato Casserole with Ooey Gooey Marshmallows 🤩🤩🤩
You will need:
🍠 3 pounds sweet potatoes
🍠 2 eggs
🍠 1 teaspoon vanilla
🍠 1 teaspoon cinnamon
🍠 2/3 – 3/4 cup brown sugar, depending on how sweet your sweet potatoes are
🍠 Marshmallows
🍠 1/4 cup butter
🍠 Wash and dry the sweet potatoes, pierce them on top with a fork and place them in the oven. Bake on 400° for about 45 minutes.
🍠 Once out of the oven and cooled a little, peel the sweet potatoes and purée them in the food processor until smooth, or you can use a manual potato masher instead.
This step can be done in a day or two ahead and the sweet potato purée can be stored in an airtight container in the fridge
🍠 Transfer the mashed sweet potatoes into the mixers bowl, add two room temperature eggs, 1 teaspoon of vanilla, 1 teaspoon cinnamon, 2/3 to 3/4 cup of brown sugar, 1/4 cup melted butter and mix until well combined.
🍠 Brush your baking dish with a generous amount of butter, spread the sweet potato mix into an even layer and smooth the surface with the back of a spoon.
🍠 Bake it on 350°F for 20 minutes, then take it out of the oven, arrange the marshmallows on top and pop it back into the oven.
🍠 Place it under the broiler for just a couple of minutes, until the marshmallows start to melt and become golden/light brown in color
