You will need: 3 cups of cheddar cheese, one cup of crushed Ritz crackers, 2 tablespoons of fresh parsley, 1/2 cup of milk, three large eggs, one medium diced onion, 1.5 pounds of 80% lean ground beef, 1 tablespoon of Worcestershire sauce, 1/2 cup of colored peppers diced, 1 teaspoon of oregano, 1 teaspoon of garlic powder, 1 teaspoon of salt and 1/2 teaspoon of pepper, Corn, milk, butter
Instructions:
- Begin by beating eggs with salt and pepper in a bowl
- In a separate large mixing bowl combine all the meatloaf ingredients: 1.5 pounds of ground beef, diced medium onion, 2 tablespoons of chopped fresh parsley, 1 teaspoon of garlic powder and 1 teaspoon of oregano, 1/2 cup diced colored peppers
- Crush your Ritz crackers in the food processor. If not available, use good quality breadcrumbs instead
- To the large mixing bowl add 1 cup of crushed Ritz crackers or bread crumbs
- Next add 1 tablespoon of Worcestershire sauce
- Add three beaten and eggs, salt, and pepper
- Mix everything together, and then add 1/2 cup of milk
- Add 3 cups of shredded cheddar cheese and mix again
- Make sure to mix until all the ingredients are very well combined
- Transfer this mix onto a baking tray lined with parchment paper and shape it into a loaf
- Bake on 350°F for 35 minutes
- In the meantime, prepare the topping:
- In a mixing bowl, combine 1/2 cup of ketchup, 1/4 cup of brown sugar( add amount to your taste), 2 tablespoons apple vinegar, and 2 teaspoons of mustard
- Mix until well combined
- After 35 minutes, take the meatloaf out of the oven and spread the topping on it
- Brush the meatloaf with the topping all around and then put it back in the oven and bake for another 25 minutes
- Once the 25 minutes is up take it out and let it rest for 10 minutes before slicing it
- I served it with corn
- To make the corn:
- I boil my corn and water, one cup of milk, 1/4 cup butter and salt to taste
- I also used potatoes
