  • Start the mixer on low speed, then add 2 tablespoons of sugar
  • Add 1 tablespoon of yeast
  • Add 1/2 tablespoon of Mahleb if available
  • Add 1/2 cup of olive oil
  • Add 1 cup of lukewarm water gradually
  • Knead the dough on high speed for five minutes
  • Drizzle some olive oil on top and lightly massage it onto the surface of the dough
  • Cover the bowl with a damp towel
  • Let it sit aside for an hour, until the dough doubles in size
  • Deflate the door and transfer it to your working surface
  • Shape the dough into a log
  • Divide the dough into equal size pieces
  • Work with one piece of dough at a time, while covering the rest with a clean towel
  • Flatten each piece, cut it in half longitudinally
  • Roll each piece then twist the two pieces around each other
  • Close it into a circle and gently press on the ends to seal them together
  • In a deep wide dish add 1/2 cup of molasses and 1 cup of water
  • Mix them until well combined
  • Dip the Simit in the water molasses mix then immediately into the sesame seeds to generously cover it on both sides with sesame seeds
  • Arrange the Simit on baking trays lined with parchment paper
  • Bake on 400°F for 35 minutes
  • Enjoy!
