For the dough you will need: 3 cups of all purpose flour, 1/2 cup of olive oil, 1 cup of lukewarm water, 1/4 teaspoon salt, 2 tablespoons of sugar, 1 tablespoon of yeast, 1/2 tablespoon of Mahleb (optional)
For the topping you will need: One cup of water, 1/2 cup of molasses, 2 cups of lightly toasted sesame seeds, Nigella Sativa seeds (optional)
Instructions:
- Start by sifting the flower into a mixing bowl
- To the sifted flour add 1/4 teaspoon of salt
- Start the mixer on low speed, then add 2 tablespoons of sugar
- Add 1 tablespoon of yeast
- Add 1/2 tablespoon of Mahleb if available
- Add 1/2 cup of olive oil
- Add 1 cup of lukewarm water gradually
- Knead the dough on high speed for five minutes
- Drizzle some olive oil on top and lightly massage it onto the surface of the dough
- Cover the bowl with a damp towel
- Let it sit aside for an hour, until the dough doubles in size
- Deflate the door and transfer it to your working surface
- Shape the dough into a log
- Divide the dough into equal size pieces
- Work with one piece of dough at a time, while covering the rest with a clean towel
- Flatten each piece, cut it in half longitudinally
- Roll each piece then twist the two pieces around each other
- Close it into a circle and gently press on the ends to seal them together
- In a deep wide dish add 1/2 cup of molasses and 1 cup of water
- Mix them until well combined
- Dip the Simit in the water molasses mix then immediately into the sesame seeds to generously cover it on both sides with sesame seeds
- Arrange the Simit on baking trays lined with parchment paper
- Bake on 400°F for 35 minutes
