Lotus Granola

What you will need: coconut oil, 3 cups of oats, lotus spread, honey, vanilla, cinnamon, almonds, pecans, white chocolate chips (optional), salt, Lotus Biscoff Cookie Butter spread

Instructions:

  • In a mixing bowl add 3 cups of oats, 1/3 cup chopped pecans, 1/3 chopped almonds, 1/3 chopped coconut
  • Mix all of these dry ingredients together
  • In another bowl mix the wet ingredients
  • Add 1/2 cup lotus spread
  • Add 1/4 cup of honey
  • Add 3 tablespoons of coconut oil ( if not available use corn or canola oil)
  • Add 2 teaspoons of vanilla
  • Add 1/2 teaspoon of cinnamon
  • Add 1/2 teaspoon of salt
  • Add 1/2 teaspoon of salt mix the wet ingredients with a spatula
  • Microwave it for just 30 seconds are in a small sauce pan stove top for just a few minutes until warm but not bubbly
  • Stir it again until smooth
  • Transfer the mix to the dry ingredients bowl and stir them together with a wooden spoon or spatula
  • Then by hand ensure that the oats are evenly coated
  • Spread the granola out evenly on a baking tray lined with parchment paper
  • Take it out of the oven every 10 minutes to stir it and break up any big clusters
  • I like to do it by hand to ensure that all granola clusters are broken up
  • Once the granola is lightly toasted in golden, take it out of the oven
  • Place the tray on a wire cooling rack and let the granola cool until it reaches room temperature
  • Once at room temperature add a handful of sunflower seeds
  • Add a handful of dried cranberries
  • Mix them in, you may add some chocolate chips if you like
  • Transfer the granola to an airtight container to store
  • Enjoy with yogurt and fresh seasonal fruits and drizzle with honey
  • Enjoy!
