Fish and Potatoes

You will need: 4 large potatoes, 2 medium onions (sliced), 1 large sea bass (cleaned, gutted and washed), marinade, lemon, tomato and pepper slices, olive oil, lemon-pepper

Instructions:

  • Mix the following ingredients in the food processor:
  • 4 large garlic cloves
  • 1/2 cup of cilantro leaves
  • 1 green pepper
  • 1 medium tomato
  • 2 tsps salt
  • 1 tsp coriander
  • 1 tsp cumin and 1/2 tsp black pepper
  • 1/4 cup lemon juice
  • 1/4 cup olive oil
  • Mix
  • Slice some potatoes and onion
  • Add 1/2 of the marinade to the sliced potatoes and onions, mix them well by hand
  • The rest of the marinade goes on the fish, make sure you massage both sides as well as the inside, every part should be covered
  • Stuff the cavity with lemon slices, pepper slices, some tomato slices
  • Drizzle some olive oil on the prepared fish, and some on the potatoes and onions
  • Mix well
  • Arrange the sliced veggies underneath and around the fish
  • Sprinkle some lemon pepper seasonings on top (If not available squeeze 1/2 lemon instead
  • Bake in a 350F preheated oven for 35 minutes, covered, then remove the cover until fish and potatoes are cooked through; about 10 more minutes
