You will need: artichoke bottoms (can be frozen or carved), lemons, black pepper, cinnamon, all spice (or 7 spice), 1 onion, salt, frozen peas, pine nuts, olive oil, butter, flour, chicken stock, 1 pound of ground beef
Instructions:
- First, make the stuffing by sautéing one minced onion in butter until fragrant
- Add 1 pound ground beef
- Break up the beef with a wooden spoon
- Add 1/2 tsp of each: Black pepper, cinnamon, all spice (or 7 spice), garlic powder
- Mix
- Cook uncovered, on medium heat until the meat is browned (this takes about 20 minutes)
- Add salt to taste
- Add 1 cup of frozen peas
- Cook for 5 minutes
- Fry some pine nuts in oil and butter
- Until they’re light golden in color then transfer them into a bowl and set it aside
- In the same saucepan using the leftover butter, add 2 tbsps of flour
- Mix flour very well to avoid having lumps in the sauce
- Add 4 ladles of hot stock (I used chicken stock) and mix
- Add 2 tbsps of lemon juice
- Bring sauce to a soft boil, then simmer on low-medium heat for 5 minutes
- Transfer the sauce to an oven safe dish
- Arrange the artichoke bottoms in the dish. If your using frozen artichokes you will need to boil them in lemon water first
- Fill the cavity of each of the artichokes with the stuffing
- They are now ready for the oven!
- Cover and bake on 350F for 25 to 30 minutes, until artichoke is fork tender
