Peas and Carrots Stew

You Will Need:

1 frozen bag of peas and carrots (make sure to de frost before adding), 2 medium potatoes, tomato sauce, salt, pepper, tomato paste, beef cubes, olive oil, butter, 1 large onion

Instructions:

  • Heat 2 tbsps of olive oil
  • Add 1 tbsp butter or ghee
  • Sear 1 1/2 lbs beef cubes on both sides
  • When meat is done being seared add 1 large onion
  • Mix the meat with chopped onion until onion is fragrant
  • Add 2 tbsps of tomato paste
  • Add 2 cups of tomato sauce
  • Add black pepper and mix
  • Cover, lower heat to a medium-low and simmer for 15 minutes
  • Add 2 cups of hot water
  • Add salt to taste
  • Add peas and carrots (I used a whole de frosted bag of peas and carrots)
  • 2 medium potatoes, peeled and cut into small cubes
  • Add potatoes to the pot
  • Mix everything together and bring to a hard boil, then lower the heat to medium, cover and cook until meat and potatoes are fork tender
  • Enjoy!
