You Will Need:
1 frozen bag of peas and carrots (make sure to de frost before adding), 2 medium potatoes, tomato sauce, salt, pepper, tomato paste, beef cubes, olive oil, butter, 1 large onion
Instructions:
- Heat 2 tbsps of olive oil
- Add 1 tbsp butter or ghee
- Sear 1 1/2 lbs beef cubes on both sides
- When meat is done being seared add 1 large onion
- Mix the meat with chopped onion until onion is fragrant
- Add 2 tbsps of tomato paste
- Add 2 cups of tomato sauce
- Add black pepper and mix
- Cover, lower heat to a medium-low and simmer for 15 minutes
- Add 2 cups of hot water
- Add salt to taste
- Add peas and carrots (I used a whole de frosted bag of peas and carrots)
- 2 medium potatoes, peeled and cut into small cubes
- Add potatoes to the pot
- Mix everything together and bring to a hard boil, then lower the heat to medium, cover and cook until meat and potatoes are fork tender
