Ingredients:
- 1 pound ground turkey
- 2 tablespoons olive oil
- 1 medium onion, chopped
- 1/2 red pepper & 1/2 yellow pepper, chopped
- 2 jalapeño peppers – 1chopped and 1 sliced
- 2 1/2 tablespoons chili powder
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon cumin
- 1/2 teaspoon dried oregano
- 1/2 teaspoon crushed red pepper flakes (optional)
- 1/2 teaspoon paprika
- 1/2 teaspoon cayenne pepper (optional)
- salt & pepper to taste
- 1 1/2 cups diced tomatoes
- 1 cup corn
- 1 cup red beans
- 1 1/2 cups Mexican blend shredded cheese
- 2 sliced scallions for garnish
In a large cast iron skillet, over medium- high heat, heat the oil. Add the onions, yellow pepper, red pepper and the chopped jalapeño and sauté for about 5 minutes until softened. Add the ground turkey and break apart with a wooden spoon. Cook for about 10 minutes or until no pink remains in the meat. Add the diced tomatoes and sauté for 2 minutes. Add the beans, corn and all the spices and bring to a simmer for 10 minutes.
Sprinkle the cheese on top, then turn the heat off and cover with a lid until the cheese melts. Garnish with the sliced scallions and jalapeño and serve right from the skillet with tortilla chips.
