- 1 1/2 pounds boneless skinless chicken breasts
- 1 medium onion, chopped
- 2 garlic cloves, diced
- 3 stalks celery, chopped
- 3 medium carrots, diced
- 2 medium zucchinis, diced
- 1 tablespoon butter
- 1 tablespoon canola oil
- 4 cups hot water
- 2 chicken bouillon cubes
- 4 pieces of Mastic (I use Greek Mastic)
- 3 cardamom pods
- 1 star anise
- 1/2 cup of your favorite noodles, vermicelli or orzo pasta
- salt & pepper to taste
In a large soup pot, heat butter and oil over medium-high heat. Add the chicken, mastic, cardamom, star anise and sauté for 7 minutes. Add the onion, garlic, half the celery and sauté for another 5 minutes or until the onion is translucent. Add the chicken bouillon cubes, black pepper, hot water and bring all to a soft boil. Add remaining celery, diced carrots and simmer covered for about 20 minutes. Add the zucchini and noodles and simmer for another 5 minutes. Adjust salt & pepper to your taste.
