Even though these beauties are known to be a Christmas classic, they are also absolutely perfect for all other times of the year, especially during spring season!
π Lemon Ricotta Cookies π
INGREDIENTS:
For the Cookies:
π 1 Stick Butter
π 3/4 Cup Sugar
π 1 Egg
π Juice & Zest of 1 Lemon
π 1 Teaspoon Vanilla
π 1 Cup Ricotta Cheese
π 1 1/4 Cup Flour
π 1 Teaspoon Baking Powder
π 1/2 Teaspoon Salt
π 1/4 Teaspoon Baking Soda
For the Icing:
π 1 1/2 Cup Powdered Sugar
π Lemon Zest
π Lemon Juice

π₯£ Beat together soft butter and sugar until well blended.
π₯£ Add Egg, lemon zest, vanilla, ricotta cheese, lemon juice, and mix.
π₯£ Sift flour, salt, and baking powder on top and mix until combined.
π₯£ Cover bowl with plastic and refrigerate for at least two hours, or up to 24 hours.
π₯£ Scoop dough into 2 tsps-sized balls and bake on 350F for about 12 minutes, or until the cookies are light golden brown on the bottom. Set cookies aside until completely cooled.
π₯£ Make the glaze by whisking together powdered sugar, lemon zest, and lemon juice. The amount of lemon juice used will vary according to your desired glaze thickness, so start with a little amount and keep adding more as you go.
π₯£ Dip cookie tops in the glaze and decorate with your favorite sprinkles or more lemon zest.
