To make this guaranteed to be a crowd-pleaser Chicken Shawerma Tower with a Greek twist you’ll need:
β€’ 2.5 – 3 pounds skinless boneless thighs
β€’ 1 tablespoon garlic pasteΒ 
β€’ 1 cup Greek yogurt
β€’ 1 tablespoon tomato paste
β€’ 1 tablespoon pomegranate molasses or honey
β€’ 1 tablespoon lemon juice
β€’ 1 tablespoon garlic powder
β€’ 2 tablespoons onion powder
β€’ 2 tablespoons mustard
β€’ Salt & Pepper to taste
β€’ 1 teaspoon cumin
β€’ 1 teaspoon paprika
β€’ 1 teaspoon oregano
β€’ 1 cup seltzer
β€’ 1/3 cup olive oil
β€’ 2-3 cups buttermilkΒ 

For the Tzatziki Sauce:
β€’ 1 cup Greek yogurt
β€’ Β½ cup coarsely shredded cucumber
β€’ 2 finely minced garlic cloves
β€’ Salt to taste
β€’ 1 teaspoon lemon juice
β€’ A drizzle of olive oil

Sides:
β€’ Flat bread
β€’ Fries
β€’ Lettuce, tomatoes, red onions
β€’ Pickles

🌯 In a large bowl, add the yogurt, mustard, tomato paste, minced garlic, all the seasonings, buttermilk, seltzer, lemon juice, and olive oil, and mix well until well combined. Add the boneless chicken to this marinade, making sure all the pieces are fully coated and submerged in it, cover and refrigerate for at least 4 hours or preferably overnight. Take the chicken out of the fridge an hour before cooking it to allow it to come to room temperature. 
🌯 I bought this basic Shawerma stand from Amazon several years ago for less than $10, but there are a lot of better quality and reasonably priced ones available now, so check them out on Amazon.
🌯 Slide the chicken pieces down the skewer rotating each one 60 degrees as you go.
Once all the chicken pieces are skewered, loosely cover the tower with an oven bag, place it on top of tray with a rack, pour hot water in the tray and bake on 375F for 45 minutes, making sure to rotate it every 15 minutes. Remove the oven bag and bake uncovered for about 35-40 more minutes, while continuing to rotate it every 15 minutes. For best results, baste the chicken a few times with the drippings, to keep it tender and juicy.
🌯 While the chicken is cooking make the Tzatziki Sauce:
Roughly shred the cucumber and transfer it into a fine strainer placed over a cup, sprinkle it with some salt, and set it aside for 15 minutes. This will release all the liquid in the cucumber and will ensure a nice thick consistency for the sauce.
In a bowl, mix the cucumber, minced garlic, Greek yogurt, salt, and lemon juice until well combined. Drizzle some olive oil on top and refrigerate until ready to enjoy it.
🌯 Once the Shawerma is out of the oven, slice the chicken down on a tray and build your wrap. I like to spread a generous amount of Tzatziki Sauce on flat bread, sliced chicken on top, then a few tomato and onion slices, pickles and a couple of French fries.
