You will need: Sweet potatoes, vanilla, cinnamon, brown sugar, marshmallows, butter
Instructions:
- First, take 3 pounds of sweet potato washed and dried each pierced on top with a fork and place them in the oven
- Bake on 400° for about 45 minutes
- Once they’re out of the oven and cooled a little, peel the sweet potatoes and purée them in the food processor until smooth, or you can use a manual potato masher instead
- This step can be done in a day or two ahead and the sweet potato purée can be stored in an airtight container in the fridge
- Transfer the mashed sweet potatoes into a mixers bowl
- Add two eggs that are room temperature
- Add 1 teaspoon of vanilla
- Add 1 teaspoon cinnamon
- Add 2/3 to 3/4 cup of brown sugar and adjust the amount according to the sweetness of the sweet potatoes to your taste
- Add 1/4 cup melted butter and mix until well combined
- Brush your baking dish with a generous amount of butter
- Spread it out into an even layer and smooth the surface with the back of a spoon
- Bake it on 350°F for 20 minutes
- Then take it out of the oven and arrange the marshmallows on top
- Pop it back into the oven, place under the broiler for just a couple of minutes, until the marshmallows start to melt and become golden/light brown in color
